Alfredo Recipe
This is one of my favorites recipes and it is LOW FAT! Or at least as low fat as an Alfredo sauce can be, LOL! I got this from a recipe collection I have called “Healthy Meals in Minutes” and it is the one recipe I use most often.
Serves 4
Ingredients:
1 tblsp margarine
2 cloves of garlic, minced
1 tblsp all-purpose flour
1 1/4 cup skim milk (1 use 1% as this is what I have in my house)
3 tblsp light cream cheese, softened
3/4 cup of grated parmesan cheese
Directions:
Melt butter in a medium sauce pan over medium heat, add garlic and cook stirring for 1 minute. Stir in flour and cook for 1 minute. Whisk in milk until blended and cook, whisking constantly until thickened about 7 minutes. Stir in Cream Cheese and cook for 2 minutes. Stir in Parmesan until blended and pour over a pound of your favorite cooked pasta. Garnish as you please with parsley, black pepper, or even crushed red pepper! I usually pour it over a 14oz. bag of cooked tortellini!
Hint:
Start cooking the sauce right after you put you pasta in the boiling water to cook. By the time the sauce is done, so is the pasta!
